Blueberry Galette des Rois recipe

On this day of Epiphany, we’re thinking of food lovers with our Galette des Rois recipe, but with a little local delicacy: blueberries!
We’ve tried it, and we can tell you it’s delicious. Get cooking! 🥧

The ingredients

  • 2 puff pastry doughs
  • 300g almond powder
  • 140g soft butter
  • 140g sugar
  • 3 eggs
  • Blueberry jam
  • 1 bean
  • (and a splash of rum for those who love rum! )

The recipe

  1. Preheat your oven to 210°C.
  2. Start by mixing the soft butter with the sugar using a fork.
  3. Add the eggs to the mixture, then the almonds.
    Optionally, pour in a little cold for extra flavour!
    Mix well.
  4. Spread a layer of blueberry jam on the unrolled puff pastry. Top with a layer of almond cream. Be careful not to go too far over the edges.
  5. Important step: don’t forget to add the fava bean!
  6. Spread the second layer of puff pastry over the mixture and press the edges with your fingers to seal the edges. Trim if there is too much pastry around the preparation (leave 1 – 2 cm of pastry on the side).
  7. Brush your galette with egg yolk and decorate with the tip of a knife. Make 2-3 holes to allow the moisture in the mixture to escape.
  8. Place in the oven for 20 minutes. Cover with aluminium foil if the cake browns too quickly.
  9. Enjoy!
